Pork Chop Casserole

This is a quick and easy dish that is one of my “go to’s” for sharing with shut-in’s, friends that are sick and or experiencing grief.  You can use two smaller pans or one large pan depending on the number of people you want to share it with.  Please enjoy and feel free to share!

8-12 Boneless Pork Chops – approximately ¼“ thick, seasoned on both sides with Salt and Pepper.  You can use thicker pork chops – just increase the oven cook time to ensure the pork chops are completely cooked.  The inside temperature of the pork chop should be 160 degrees.

1 large Vidalia onion – peeled and slice thin using the #1 setting on the Simple Slicer. It’s ok to cut the onion in half and/or quarters to fit inside the food guard.

2 cans (10.5 oz) of Cream of Mushroom Soup 

½ to 1 cup of Chicken Broth or Stock

6-8 baking potatoes – washed and sliced using the #3 setting on the Simple Slicer.  I do not peel my potatoes but you can if you like!

Bacon grease (yes I use bacon grease versus vegetable oil – actually less preservatives)

Heat oven to 375 degrees

Using a 12” non-stick skillet, put a good size spoon full of Bacon grease and cut on stove top.  Once the skillet is hot, put the onion in to cook until it is caramelized.  Remove from skillet and put the seasoned pork chops in and brown on both sides.  Set skillet aside.

Using your Silicone Chef’s Brush, brush oil or bacon grease in baking dish or disposable pan. Place potatoes in first and season with Salt and Pepper, then place the caramelized onion on top of the potatoes, then the browned Pork Chops.  In the Small Batter Bowl, empty the two cans of Cream of Mushroom Soup.  Add Chicken Broth to fill approximately half of each can of the soup, stir and then add to the soup in the Small Batter Bowl. Whisk the Soup and Chicken Broth mixture then pour evenly over the Pork Chops. 

Place in the preheated oven and cook uncovered on 375 degrees for one hour.  You want to make sure the potatoes have cooked and the pork chops are completely done – 160 degrees inside.  

Cover with Heavy Aluminum Foil and place on a tray to carry to your friends.
